Salt & Preparation
MALOSSOL is a Russian term (literal translation "little salt"). It is a minimal salt preparation to cure fresh caviar with up to 5% added salt (3-3.5% is optimal). Malossol is preferred by experts.

Classic Osetra Caviar is nutty and full flavored boasting traditional Caspian Osetra character. Select Osetra Caviar, selected for its bright medium-large eggs, deliveries a rich, buttery and delicate flavored Caviar.
For connoisseurs, it is the best caviar currently on the market. Created by crossing the Amur and the Caluga sturgeon. It has a medium-sized, light golden brown to gray grain. Its taste is delicately nutty and creamy, lightly salted.
Golden Ossetra is a rare form of Ossetra caviar. This rare egg is rich, creamy and has a beautiful light gold colour. It is often bigger than darker egg Oscietra.
The peculiarity of this caviar is that we find the salty taste of the wild caviar. The selection guarantees a very rare caviar with its golden color, big loose grains, firm texture and lengthy aftertaste.
Since 2006, all caviar tins must be marked with an identification code. This conforms to EU Regulation 865/2006 and the specifications of the CITES Directives, and it cannot be removed without causing damage. This code confirms that the caviar originates from legal breeding facilities.
